Nhoam Krauch Th'long: pomelo salad

Ingredients
300g pommel
100g bacon, oiled and cut in 1/2cm stripe
70g dried shrimp, soaked, drained and pounded
50g peanut, roasted and coarsely pounded
50g coconut, grated and stir-fried over the heat
30g mint leaves

Dressing
2 tbsp white sugar
1 1/2 tbsp fish sauce
1 tsp salt
1 tbsp m'sogarlic soup
1`tsp vinegar
1 tbsp oil
7 garlic clove, chopped
5 shallots, chopped

Method
peel pommel and break into tiny pieces and set aside. Place grated coconut in pan and stir-fry over the low-head until brown. Roast chopped garlic and shallots with oil until golden.

In a large salad bowl, toss the pommmel, bacon, peanut, dried shrimp, stir-fried coconut, roasted garlic and shallots and blend well, then add fish sauce, sugar, m'sow! soup, salt and vinegar.

Lastly garnish with mint leaves
