Nhoam S'dao: Sweet and Sour Bitter Salad

S'dao is a kind of vegetable having bitter taste but very popular for adult or old Cambodia people. It is available between November to February, To help reduce the bitterness you can blanch s'dao stems in the boiling water in a quick time, they can select only its youg leaves and flower for  using a salad.



Ingredients
5 bunches of s'dao
60g bacon, boiled and cut into thin strips
50g smoked fish, broken and pounded coarsely
20g dried shrimp, coarsely pounded
1 ripe tomato,sliced
1 cucumber, hash

Dressing
4 garlic cloves, burned and crashed
1 tsp prahok, steamed and dissolved
1 tbsp sugar
1 tbsp fish sauce
2 tbsp tamarind juice

Method
Blanch bunches of s'dao in boiling water for a second , then remove its leaves and flower from their stem, keep it in a large bowl, next add sliced tomato, hashed cucumber , dried shrimp and smoke fish
blend well.

To make the dressing. mix the crashed burned garlic, prahok, sugar fish sauce and tamarind juice, then cover onto the vegetable mixture.
