Tik Kroeung : Prahok Dip

Ingredients
200g fish
1 1/2tbsp prahok
2 1/2 cups water
1 tbsp white sugar
1 tsp fish sauce
1 tsp salt
1-2 limes
5 garlic cloves, burned and pounded
1/2 cup peanut, roasted and coarsely pounded
2-3 bird chilies

Fresh Vegetable

Method
Boil water in a large pot, when bubble add fish, cook fish for about 10 minutes until cooked. Remove from water and break into flake in a serving bowl. Place prahok in a sieve and dip in boiling fish stock, use a spoon to press the meaty prahok, discard the skin and bone. turn off the heat. Pour the fish-prahok stock into the bowl of flake fishl, season with sugar, fish sauce, pounded garlic and pounded peanut. Finally, add lime juice and sprinkle combo of chi and spring onion.

This dish is served with fresh vegetable such as cucumber, purple and pea eggplant, banana blossom and water grass.
