Ingredients
a young whole chicken (about 1 kg) with heart, liver and stomach
150 g pork attach grease, chopped into fine
50 g of Chinese mushroom, quartered
a small bunch of vermicelli, soaked, drained and cut 10 cm long
20 g wood ear mushroom, soaked, drained and cut small
20 g dried shrimp, soaked and drained
2 tbsp raw peanut, boiled and crash into two parts
2 tbsp lotus seed, boiled and taken the inner part out
2 tbsp fish sauce
1 tbsp sugar
1 tbsp soybean sauce
1 tbsp m'sow! soup
6 garlic cloves
6 shallots
1 tsp black pepper
Method
Remove heart, liver and stomach then chop into small, set aside. Marinate chicken with a bit of salt, soybean and m'sow! soup both the inside and out, let it sit in one place.
Mix Chinese mushroom, vermicelli, Tra cheak-kandol, phka chek, dried shrimp with minced pork.
Then brown garlic and shallots and stir-fry with the hear, liver stomach and pork mixture. When the pork is cooked add the peanuts and lotus seeds and season with fish sauce, salt , pepper and sugar.
Stuff the mixture in the chicken and roast for 40 minutes or until the chicken is cooked.
