Prahok kh'tih: Creamy Prahok Dip

200 g fresh fish
100 g minced pork
2 tbsp prahok
1 cup coconut cream
2 cups coconut milk
4 cloves garlic
3 shallots
1 green fresh pepper, sliced a bit size slice
1 tbsp sugar
1 tsp salt

1/3 cup combo of saw mint, basil and spring onion

Method
Bone fish then slice thinly and set aside. Pour coconut and coconut milk in a large pot over a medium-high heat and bring to the boil. Once bubbling add minced pork, string constantly to prevent it sticking together in lumps. boil for 15 minutes or until well cooked, then add prahok, salt and sugar, while add sliced fish into the pan and cook without string for about 10 more minutes before adding garlic, shallots and sliced peppers.

When serving don't forget saw mints, basil and spring onion for garnishing and take good smell.

This dish is served as a coal dip with fresh vegetables such as purple eggplants, cucumber, banana blossom and water grass.
